Bringing together the finesse of Italian gastronomy and the artistry of handcrafted cuisine, Taj Surajkund Resort & Spa, Delhi-NCR presents Pasta Perfetto, a ten-day celebration of authentic Italian flavours from 24th October to 2nd November.

Guests can explore an exclusive à la carte menu featuring ten signature creations, each made in-house to showcase the diversity of Italian pasta. Highlights include Duck Carbonara, Rigatoni al Rago di Agnello, Tagliatelle di Gambretti, and Lasagna di Montone for non-vegetarians, while vegetarians can enjoy Ravioli di A Ragosta, Beetroot Gnocchi, Ravioli Spinach Ricotta, and Tagliatelle al Tartufo.

Pasta Perfetto embodies Taj’s enduring philosophy of culinary excellence where tradition meets modern interpretation to create a true Italian dining experience.

Paanch: Chef Vanshika Bhatia x indicā present an elemental dining experience inspired by Delhi’s autumn

Delhi’s autumn finds its flavour at indicā this November, as Chef Vanshika Bhatia introduces Paanch, a five-course dining experience inspired by the five elements, and by the textures, moods, and nostalgia of the season.

One of India’s most dynamic culinary voices, Chef Vanshika Bhatia is known for her ingredient-led, intuitive approach to cooking.

Paanch finds its voice at indicā, founded by Damini Ralleigh and Sandeep Garg. indicā has built a reputation as one of India’s most forward-thinking culinary spaces, a platform that engages with the country’s many food histories and regional lineages. Each collaboration contributes to an ongoing curatorial inquiry into what defines the Indian table today, and how we can come together to build a better, more resilient, food future.

In collaboration with Godawan, India’s artisanal single malt crafted from six-row barley and inspired by the Rajasthani desert’s rare spirit of resilience, Paanch finds a fine pairing that complements its elemental storytelling through liquid expressions of depth and character.

Each course in Paanch reflects one of the five elements. Earth opens with steamed corn cakes and wild mushroom chutney, evoking mist and soil. Ether lightens the mood with tender quail glazed in a green peppercorn velouté. Water flows steady and serene, pairing caramelized Surmai with herbed white peas. Fire builds intensity through handmade pasta tossed in spiced roast mutton. The experience closes on Wind, a baked apple pavé layered with mousse and caramelized notes.

Paanch will be hosted at indicā on November 2, 2025, with seating for lunch (12:30 PM) and dinner (7:00 PM).
